How to Know When Broccoli Has Gone Bad

Knowing whether broccoli is still good to eat can be surprisingly simple. Fresh broccoli should look vibrant and firm, with tightly packed green florets and a sturdy stalk. It may have a mild vegetable or slightly sulfurous smell, but it should never smell sour, rotten, fermented, or unusually unpleasant. When broccoli starts changing, four things can help you decide: color, smell, texture, and mold.

Yellowing is one of the most common signs that broccoli is getting old, but yellow broccoli isn’t automatically spoiled. If it is only slightly yellow, still firm, free of mold, and smells normal, it may still be usable, although the flavor can be more bitter and the texture less appealing. Brown, gray, or black areas should be inspected carefully. A small isolated spot may sometimes be removed, but widespread dark discoloration—especially with softness, slime, or a bad smell—is a strong reason to throw it away.

Smell is another important warning sign. Fresh broccoli has a relatively mild aroma, while spoiled broccoli can develop a sour, rotten, fermented, or unusually strong odor. “If you open the container and immediately think, ‘Whoa, what’s that smell?’, pay attention.” Check questionable broccoli before cooking because heat can naturally make broccoli’s sulfur smell stronger, but cooking will not make spoiled broccoli safe.

Texture can also reveal deterioration. Fresh broccoli should feel firm, while spoiled broccoli may become soft, mushy, limp, wet, or slimy. A slightly limp stalk can simply mean it has lost moisture, but genuinely slimy broccoli is a major warning sign, especially when combined with discoloration or an unpleasant smell.

Mold is the clearest reason to discard broccoli. If you see fuzzy mold, don’t simply cut off the visible patch and eat the rest, because mold can extend beyond what you can see. When several warning signs appear together, don’t take chances. “No vegetable is worth second-guessing when the warning signs are obvious.” Keep broccoli refrigerated, avoid washing it until you’re ready to use it, and try to cook older broccoli before it reaches the point of spoilage.
