Slow Cooker Rice Pudding

Slow Cooker Rice Pudding turns simple pantry ingredients into a creamy, comforting dessert with very little effort. Short-grain rice slowly cooks in sweetened milk, absorbing the liquid until it becomes soft and the pudding thickens. Unlike stovetop versions, this method does not require constant stirring, making it an easy option for beginners or anyone who wants a nearly hands-free dessert.

Short-grain varieties such as Arborio or sushi rice work especially well because they release starch during cooking. This natural starch helps create the pudding’s smooth, velvety texture, so the rice is usually not rinsed beforehand. Whole milk adds richness, while sugar and vanilla provide sweetness and aroma. Cinnamon adds warmth, and raisins become soft as they cook.

One important detail is that the pudding may appear slightly loose when it first finishes cooking. It continues to thicken as it cools, so it is better not to overcook it in the slow cooker. As the original recipe notes, “timing and resting are important.” Allowing it to cool gradually helps produce the creamy consistency that makes rice pudding so appealing.

The recipe can also be adjusted to suit different tastes. Raisins can be replaced with dried cranberries or apricots, while nutmeg, cardamom, or citrus zest can add different flavors. Nuts or coconut can provide extra texture, and part of the milk can be replaced with cream for a richer dessert. Oat or coconut milk can also be used, although the final thickness and sweetness may vary.

Leftover rice pudding keeps well in the refrigerator for several days and becomes thicker as it sits. When reheating, adding a small splash of milk can bring back its creamy texture. With basic ingredients, gentle cooking, and a little patience, this slow-cooker dessert delivers a warm and satisfying result without much work.
